    Southwest Turkey Wrap

    Southwest turkey wrap

    This recipe is one of the quickest grab n' go lunches that I use. It's easy to make ahead. In fact make a bunch, keep in the fridge for you and the kiddos to grab throughout the week! I also love to incorporate my favorite flavors into my meals. I love anything tex mex or southwest inspired. Basically taco nights are a must in my house. 

    That is why I came up with this Southwest Turkey Wrap. Its packed with lean protein ( turkey and uncured turkey bacon), healthy fats ( avocado), veggies, and spritzed with fresh lime juice to add some flavor and preserves the avocado! 

    To complete this lunch add some fresh fruit and veggies! I love grapes and I love dipping radishes in a mix of plain greek yogurt and dill. 

    I hope this wrap makes it to your weekly lunch menu!

    You Need:

    Yields 1 wrap ( duplicate if you want to make in bulk) 

    1 low carb wrap

    3 oz of deli turkey meat

    2 slices of  turkey bacon ( cooked- I microwave mine, or you can bake it) ( I used Jennieo's uncured turkey bacon) 

    Diced tomatoes

    2 tbs corn

    ½ small avocado

    2 tbs diced red onion

    2 tbs tortilla strips

    1 tbs chopped green onion 

    1 teaspoon of lime juice 

    Directions:

    Lay out tortilla, spread avocado out, then layer turkey, turkey bacon, corn, red onion, tomatoes, and tortilla strips.

    Then spritz with fresh lime juice. 

    I paired mine with 1 cup of green grapes and ½ cup of radishes with greek yogurt and dill dip.
