Kale ( like spinach) is easy to incorporate into most foods you eat everyday. And now that it is becoming kale season you will be seeing a lot more kale on my blog!
I love sneaking in veggies in my breakfasts. My personal goal for everyday is to have 6-7 servings of veggies and 6 servings of lean protein. Frittatas provide the perfect opportunity to get both veggies and protein first thing in the morning.
I pretty much will add veggies to my eggs anytime. But a frittata makes a great way to take your breakfast to go. Just cut the frittata into 4 portions and pack in individual containers to take to school or work with you to heat up later in the microwave.
This frittata I added a large amount of kale, turkey sausage, more egg whites than eggs, and goat cheese. It is amazing and also so good for you to start your day!
You Need:
An oven proof skillet ( I used a small cast iron skillet)
Cooking Spray
6 egg whites
2 eggs
4 oz of soft goat cheese
8 oz of turkey sausage ( I used Jennieo)
2 cups of kale ( rinsed and massaged)
Directions:
Preheat oven to 350
Spray skillet with cooking spray
Heat skillet on medium high and cook the sausage
Once the sausage is cooked through ( 5-7 minutes), add kale
In a large measuring cup with a spout beat eggs, egg whites, and cheese together ( Add salt and pepper )
Pour egg mixture in skillet on top of sausage and kale
Continue cooking eggs on stove top until you can see that the eggs are set and some what cooked on the bottom ( Do not stir, just let it sit)
Turn off burner and transfer skillet into the oven for 8-10 minutes or until frittata is cooked through or slightly jiggly ( it will continue to cook in skillet if you let it rest for a few minutes after removing from oven)
Slice into 4 portions and enjoy!
