Whole Wheat Turmeric Blueberry Muffins
Whole wheat muffins that are fluffy, moist, bursting with blueberries, and a kick of turmeric is a great and healthy option for your morning!
Are you ever in that situation where you think buying that delicious looking blueberry muffin at your local coffee shop is a healthy option when you’re out? Only to look up the nutritional value of said muffin and basically you just ate a large piece of cake with some antioxidants. How frustrating is that?!
Per usual, I like to make everything at home with whole clean ingredients. This way I know where everything came from and I can stick to my healthy lifestyle.
I also have wanted to play with turmeric for a while now after I saw a dessert recipe on Pinterest a few weeks ago. It intrigued me, and I couldn’t get it out of my head.
Fun Fact: Turmeric has been used in India for thousands of years for many medical applications. It also contributes to anti-inflammation, it’s considered brain food, and some studies have linked it to cancer prevention!
So when Bob’s Red Mill sent me a big box of fun earlier last month I knew what was in store for their Whole Wheat Pastry Flour. Seriously, BEST.FLOUR.EVER. It makes the best cookies, cakes, muffins, pancakes, you name it!
These also make a great post workout snack. I shared these with my fellow Crossfitters this morning and they seemed pretty happy about it! J
Serves 12 ( 1 muffin) : Calories: 164, Fat: 2.3g, Net Carbs: 24g, Protein:8g, Sodium: 74 mg, Sugar: 17g
You Need:
1 ¼ cup of whole wheat pastry flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
1 tbs turmeric
Pinch of ground black pepper
1 tbs ground flax meal
2 ¼ scoops of vanilla whey protein powder
1 teaspoon vanilla extract
1 tbs coconut oil, melted (optional)
¾ cup of unsweetened applesauce
½ cup raw honey
⅔ cup unsweetened cashew milk: this stuff is SO good! (Or you can use unsweetened almond milk or skim)
1 tbs brown sugar
2 eggs
1 cup blueberries
Directions:
Preheat oven to 375
Line muffin tin with liners or spray with cooking spray
With a mixer, blend flour, baking soda, baking powder, turmeric, pepper, protein powder, and flax.
In a separate bowl, mix eggs, vanilla, honey, milk, and brown sugar
Pour wet ingredients into dry ingredients blend with mixer until smooth
Fold in blueberries
Fill each muffin liner ¾ full and bake in oven for 20 minutes (until toothpick comes out clean)

I would have never thought to put turmeric in a blueberry muffin. Intrigued! And putting this on my short to-do list. Yep...that whole wheat pastry flour is the best!
