    Homemade Cinnamon Roll Larabar

    Anyways, I have these DELICIOUS cinnamon roll fruit and nut bars I want to discuss with you. And I am not gonna lie; it’s been one hell of a week. Let’s just say the weekend couldn’t get here fast enough and I actually took this past Monday off too!

    Does anyone else feel that shorter weeks actually feel MUCH longer??? Or is it just me?

    Between killing it at our CrossFit gym and working longer hours (and other drama) it’s been an up and down kind of week you know? Also, Max our oldest kitty needs a lot more TLC these days as he is recovering from a mini stroke he had about a month ago. Don’t worry! He is in good spirits, just a bit frustrated that he can’t walk as far as he used to. And stairs are not an option at the moment. But I was super surprised yesterday when I opened the door for Jake to come in that my big guy had walked all the way from the back of the house to the front door and was going to walk on the porch! Super thrilled with all of his progress!

    I also got some terrific news from the Whole30! I am teaming up with them with some new features! I can’t say what it is yet, but stay tuned! Oh! But if you want a hint, do a September Whole30 with me! Trust me, you want to do this one!     And also comes with September is school and work (for all you teachers out there) and sometimes finding the right healthy snack is hard.

    I love having something simple yet filling as my snack (aka pre-workout meal). My go-to is Larabars. But when you’re on a budget spending $5 a box isn’t feasible. Instead I like to make them myself! And there are SO many flavor combinations!

    So to prepare for those after school/work cravings think about biting into:

    A sweet yet salty fruit and nut bar

    Made with only natural ingredients

    And tastes like a cinnamon roll!

    So it’s healthy and doesn’t taste like it! That’s a WIN/WIN in my book!

    So snack away and know you are fueling your body with something good that just tastes like its bad for you!

    Description

    Quick,easy, and filling snack that is healthy for you even though it tastes like your favorite sweet!


    Ingredients

    Scale
    • ⅓ cup, Dates (pits removed & let soak for 15 minutes prior to blending)
    • ¼ cup, Raisins
    • ¼ cup, Almonds
    • ¼ cup, Pecans
    • 1 tsp, Cinnamon
    • ½ tsp, Vanilla Extract
    • ¼ tsp, Salt


    Instructions

    1. Soak the dates for approximately 15 minutes to soften them up- makes it easier to blend
    2. Blend dates and raisins in a food processor
    3. Remove date and raisin mixture and add the nuts and pulse until finely chopped
    4. Add date mixture back in and pulse until blended thoroughly
    5. Add vanilla, cinnamon, and salt to the fruit and nut paste
    6. Spread mixture evenly on a parchment lined baking sheet
    7. Chill in refrigerator for 30 minutes
    8. Slice into little rectangles and store for up to a week!

        Hi Jay! Sorry about the confusion! The recipe is back up and running! We are currently "under construction" and redesigning our website and some of my older recipes (like this one) had an issue in the migration. Please excuse our mess while we patch things up!

      These look positively decadent! The carbs and sugars are over my personal threshold but the family would love them. Have you considered a high protein variation?

        Thank you Lisa! The higher sugar is due to the dried fruit used; but at least it's all natural and perfect for your family! 🙂 I haven't considered a high protein option. I'd love to hear what you would like to add though!
