I think today is a great day for tacos.
But, I pretty much think this everyday. <---- Not joking.
Remember a couple of days ago I shared my brilliant idea for using up all those turkey leftovers from Thanksgiving?
Well, I'd like to share it again. But this time in taco form with an awesome fall inspired slaw that you might just want to eat on it's own!
I also added some caramelized red onions because I love them and you will too!
As I was saying, I made Cranberry BBQ Pulled Turkey last week. I know, it's the curse of being a food blogger. By the time we actually get to Thanksgiving, I am usually done with turkey. But hey, turkey is a healthy lean protein option and I am game. Especially if it's in taco form.
Ok, you might think i am weird here but I just envisioned a turkey transforming into a taco like a transformer would. With sound effects and all. Apparently I am in need of some more coffee cause the cats have been keeping us up all night long since we moved into the new house. It's literally driving me insane.
Flynn is good in our room and just sits on the bed and doesn't move. Doolittle and Fifi however, will dig at the door or sing the song of their people for hours on end. They never did this at our old house. I am REALLY hoping its just a phase.
Let's just say we have had to put down tin foil at the base of the door to deter any digging. Cats hate the sound of tin foil. Like it needs to stop soon cause I have been awake since 3AM listening to Fifi howl for hours on end. Poor thing meowed so much that she lost her voice. We do let them in sometimes but all they do is sit and bite our faces. Which is why they are usually not allowed in.
Anyone else have this issue? Any tips???
Again, hoping it's just a phase because of the new house.
In other news, the outdoor cat (Otter) we brought with us from Fredericksburg is pretty pleased with this move. We were SO worried she would run away when we released her. But nope! Still at the door every morning and evening for meals and has her very first sofa with heating pad! She is a feral that adopted us a couple years ago who kept bringing us her kittens (which we adopted to loving homes) and we got Otter fixed with all her shots. But unfortunately she is not an indoor pet. But I say she's pretty happy here with her sofa, 2X a day feedings, and the woods in the backyard to prowl around in!
Ok! Back to these awesome sauce tacos. Literally. There is awesome cranberry bliss and rainbows to be had with these tacos.

First up is warm corn or flour tortillas OR lettuce wraps if you want to take the super low carb route

Finally it's toppings toppings toppings! I chose greek yogurt jeweled with pomegranate arils (because I am OBSESSED with pomegranate this year.)
Now, go make these tacos and have a margarita cause i am feeling bossy and you totally need some adult juice after the holidays and dealing with the family. Just sayin'.
