    Easy Whole30 spaghetti squash with baked turkey meatballs filled with Italian flare and seasonings to kick your Whole30 or week off to a great start!

    I have aid it numerous times here on The Kitcheneer...MEAL PREP PEOPLE!!!

    I can't stress it enough. Whatever your nutritional goals are meal planning and meal prepping is KEY to success. You are WAY less likely to cave on your goals and eat that chocolate when you have prepped ahead AND spent money on the ingredients.

    I am sharing with you one of my go to's for meal prep. Spaghetti squash with turkey meatballs.

    I typically make baked spaghetti squash on Sundays plus a ton of meatballs to pair with veggies. It's such an easy way to make 4 days worth of lunches in about 45 minutes!

    While the spaghetti squash bakes in the oven with a drizzle of olive oil and s&p, mix together the ground turkey with some seasoning ( I LOVE Primal Palate's Amore!) plus almond flour, and an egg.

    Then it's only a few minutes of the meatballs sizzling to doneness then assemble in meal prep containers!  

    Or these are great too!

    Now you are all set for Monday-Thursday!

    I typically do a mid-week mini prep to keep things fresh for Thursday/Friday. Because I just can't do 4 day old turkey or chicken!

    Ingredients

    Scale
    • For the squash:
    • 1 spaghetti squash
    • 1 tsp salt
    • 1 tsp pepper
    • For the meatballs:
    • 2 tbs olive oil
    • 1lb ground turkey
    • 4 garlic cloves, minced
    • 1 egg
    • ¼ cup almond flour
    • 1 tsp salt
    • 1 tsp
    • 1 tsp oregano
    • 2 tsp of your favorite Italian seasoning blend ( I love Primal Palate's Amore)
    • ½ tsp garlic powder
    • 24oz jar of your favorite compliant pasta sauce or homemade sauce

    Instructions

    1. Preheat the oven to 375
    2. Carefully slice the squash in half, lengthwise and remove/discard seeds
    3. Drizzle squash with 1 tbs olive oil and salt and pepper
    4. On a parchment lined baking sheet place squash round sides up and roast in oven for 40-45 minutes
    5. While the squash roasts,make the meat balls
    6. In a large bowl combine all meat ball ingredients minus the oil
    7. Roll into 2oz meatballs (roughly golf-ball sized)
    8. Preheat a large skillet on medium high heat.
    9. Heat oil in skillet and add meatballs
    10. Cook on all sides rotating occasionally until cooked through (10-15 minutes)
    11. When spaghetti squash is cool enough, shred with forks and assemble meal prep containers with squash, 2 meatballs, and sauce.
    • Prep Time: 10 mins
    • Cook Time: 45 mins

        Hi Cecilia!
        Yes! Bake at 350F for 30 minutes or until 165F internal temp is reached!

      Loved the recipe however is there anyway to get the spaghetti squash softer? My fiance didnt like the little crunch to it.

        Hi Destiny!
        Glad you loved the recipe! Spaghetti squash does have a slight “crunch” to it. Try cooking it a bit longer (10 more minutes) to make it softer. But you can always swap out the spaghetti squash for zucchini noodles which have a softer texture. Use what you prefer! 😊
