With December only TWO days away I feel like we need ALL the cozy comforting recipes for all the chilly nights ahead. Not only is this Shepherd's Pie the coziest BUT easy AF.
Shepherd's Pie only takes a few minutes to make...even less if you have any leftover mashed potatoes from Thanksgiving on hand! I feel like between the pasta and the cookies and treats there needs to be balance. It's hard to get veggies and lean protein in during the colder months.
But trust me, this Shepherd's pie is not only healthy it's PERFECT to impress guests at a family dinner with literally not much effort.
I browned venison from The Honest Bison with simple seasoning, fresh herbs, and a bag of frozen mixed veggies. The next step is to simply scoop the mixture into a casserole pan and spread mashed potatoes (or cauliflower mash) on top.
Bake and dig in!
I made this earlier this month and it was such a hit with Jake! He basically told me that was his lunches for the week and it was gone in less than 3 days! So, definitely husband approved!
So please please make this Shepherd's Pie for those chilly nights. As well as this salad and dessert for a full menu! It's cozy, hearty, delicious, and packed with hidden healthiness! I used The Honest Bison's Ground Venison as my protein and highly recommend! You could also use ground bison, elk, beef, whatever works for you! I LOVE The Honest Bison's ground bison and elk (personal favorite).

Ingredients
- 2lbs of The Honest Bison Ground Venison 1 tbs of avocado oil
- 1 sweet onion, diced
- 4 cloves of garlic, minced
- 3 tbs of tomato paste
- 1 bag of frozen mixed veggies (corn, carrots, and peas) 1 teaspoon of salt
- 1 tsp black pepper
- Splash of red wine
- 2 cups of mashed potatoes
- ¼ cup parmesan cheese
- Fresh thyme for garnish
Instructions
- Preheat oven to 385F
- Heat a large skillet on medium high heat and add oil
- Brown venison and break down into a fine crumble and stir in onion and garlic
- Sauté venison and onion mixture until onion is translucent (about 6-8 minutes)
- Stir in frozen veggies, salt, pepper, and tomato paste. Cook for another 3-5 minutes or until venison is cooked through. (130-140F)
- Add smash of wine and remove from heat
- Spread venison mixture to the bottom of a casserole dish, add mashed potatoes and spread into an even layer over top.
- Sprinkle cheese on top
- Bake in oven for 15 minutes or until cheese is browned. Top with thyme and serve!
