    Whole30 Mediterranean Turkey Meatball Cauliflower Rice Bowl

    Mediterranean inspired turkey meatballs in a cauliflower rice bowl is my new favorite WHOLE30 COLD LUNCH MEAL PREP!!!

    So I had a stroke of genius a month ago and made these EASY cauliflower rice bowls as my COLD meal prep lunch for the week. COLD CAULIFLOWER RICE?! Yup.

    I thought it was going to be a failed experiment. WRONG. Pretty much became my new favorite lunch to take in! And my coworkers didn’t have to smell reheated cauli rice! 🍚

    Just made a big batch of Mediterranean inspired turkey meatballs, sliced veggies, and put over a bed of cauliflower rice that I got at a grocery store. Then a drizzle of Tessemae's on the go lemon garlic dressing 🍋

    Sometimes I make it the old fashioned way but if I’m in a hurry and only want to spend 35 minutes on Sunday meal prep... this recipe is for folks on the go!!! 🏃🏻‍💃🏻

    Typically on a Sunday, I take a couple hours and batch cook for 3-4 days worth of breakfasts and lunches:

    Meal Prep Game Plan:

    Batch Cook:

    Mediterranean Meatballs

    Buffalo Chicken

    Chop all veggies

    Add In Day of:

    Cauliflower Rice and Fresh Veggies and top with meatballs

    Butter lettuce and baby carrots (as a side) for the buffalo chicken lettuce wraps

    Now you have 2 different recipes to prep for next week for lunch! 🙂

    Ingredients

    Scale

    For the Meatballs:
    2 tbs of olive oil (I used Kasandrinos)
    1lb ground turkey
    1 tsp salt
    1 tsp Pepper
    1 tsp dried dill
    ½ tsp oregano
    ½ tsp garlic powder
    ¼ cup of compliant almond flour
    1 egg

    For the bowls:
    Cauliflower rice (I used prepped rice from the store but you can make your own at home!)
    Diced tomatoes
    Fresh dill
    Lemon juice
    Diced cucumber
    Green beans
    Tessemae's lemon garlic dressing

    I also used a drizzle of Trader Joe's Zhoug Sauce (Whole30 Compliant)


    Instructions

    INSTRUCTIONS

    Preheat a large skillet with the olive oil.
    .
    Mix turkey with salt,pepper,oregano, egg,almond flour,dill, garlic powder,and the egg.
    .
    Form into meatballs and add them to skillet.
    .
    Cook meatballs on the stove top until cooked through, rotating every 1-2 minutes (10-12 minutes)
    .
    While meatballs cook, assemble bowls with cauli rice and veggies.
    .
    Once meatballs are cooked, allow to cool slightly then add to bowls.
    .
    Drizzle with dressing and enjoy!
