    Gluten-free Apple Spiced Coffee Cake Overnight Oats

      Gluten-free Apple Spiced Coffee Cake Overnight Oats are the best lazy simple breakfast that is perfect for coffee lovers! Plus it's packed with superfoods and only uses natural sweetener! The perfect fall flavored overnight oats!

      I have been making overnight oats for years and I always find it fun to come up with new flavor combos to enjoy.

      We recently got a fancy new espresso machine (my husband's obsession) and that's what inspired this flavor combo.

      The oats turned out creamy,apple pie meets coffee cake goodness, and a touch of my favorite coffee flavor from a shot or two of espresso!

      I also added some collagen to boost the protein as this is considered a full meal.

      Even though things are VERY different from 6 months ago, I am working from home full time and even though I COULD go make myself a breakfast from scratch. Sometimes I have lots of morning meetings and it just isn't feasible to do so. That's why I rely on these quick grab n go back to my office lair with one of these jars I have prepped in the fridge.

      It has pantry staples and the process is as easy as throw it all in a bowl, mix, and throw it back in the fridge.

      Overnight oats are typically eaten cold. But if that's not your style, warm it up! Your the boss applesauce.

      The oats keep their integrity and oat intact overnight and avoids that tacky gummy texture that cooked oats seem to get sometimes. Plus with all the added flavor (coffee, apple sauce, oat milk) it all infuses with the oats!

      It's overnight oats with a punch of caffeine to wake you up and SUPER satisfying that will keep you full for HOURS!

      I actually used the new Trader Joe's Maple Oat Milk here and it added another level of maple to this! If you have a Trader Joe's you need to add this to your over night oats or coffee in the morning!

      For storage, I recommend good old mason jars.

      Description

      Apple Spiced Coffee Cake Overnight Oats is a Gluten free, apple pie coffee cake take on overnight oats brings you all the flavors of fall in a grab n go breakfast!


      Ingredients

      Scale
      • 1 cup of gluten free oats
      • ⅔ cup of milk (I used coconut milk)
      • ⅓ cup of fresh brewed coffee
      • ¼ tsp cinnamon
      • 2 tbs maple syrup
      • 1 tbs chia seeds
      • ¼ cup apple sauce
      • 1 scoop of collagen (optional but adds protein to your meal!)

      Instructions

      1. Place all ingredients (minus the garnish) in a mixing bowl and combine
      2. Spoon the mixture into 2 mason jars or glass containers and cover for at least 4 hours (overnight is preferred)
      3. Add sliced apples (if desired) and enjoy!
      4. Other favorite toppings: sliced banana, peanut or almond butter drizzle, sliced apple, cinnamon, espresso powder.
