    This twist on your favorite homestyle chicken noodle soup is enhanced with the anti-inflammatory benefits from turmeric plus gives it that golden glow! ✨ You will also get a BOOST of dietary benefits from the fresh garlic too! Did you know that when you chop THEN stop (wait 10 minutes after chopping garlic) it activates and enzyme in garlic called allinase?

    "When fresh garlic is chopped or cut, you activate an enzyme called alliinase," says gastroenterologist and Fiber Fueled author Will Bulsiewicz, MD. The alliinase, he explains, converts alliin (a sulfoxide in fresh garlic) to a compound called allicin, which is antibacterial, antiviral, and antifungal. (It's also scientifically linked to being good for the heart.)

    So when adding garlic to ANYTHING. Think "chop" then "stop" and you will get all of these extra cool benefits!

    This hearty homemade chicken noodle soup is perfect for those chilly nights when you are craving soup on a cold day , but want something healthy too! A mix of bite-sized pieces of chicken (all cooked in the soup), lots of root vegetables, turmeric, a metabolic boost from red pepper flakes, kale, chicken broth or chicken bone broth, and noodz. It's full of herbs, hearty, and so delicious. The ultimate comfort food.

    How to make Instant Pot Golden Chicken Noodle Soup

    I love my Instant Pot (or electric pressure cooker) and it's a budget friendly device that enables one who forgets to thaw chicken on a regular basis a life saver (and from ordering take out!). The Instant Pot makes things so easy with a quick saute (using the saute function) of the garlic, onion, and chicken in a little oil. Next comes the turmeric, a pinch of red pepper flakes, and the veggies.

    Pour in the broth, lemon juice, and dry noodles. Seal and DONE.

    Seriously such a nutritious and EASY instant pot recipe. Perfect for busy days and weeknights!

    BONUS??? If you forget to thaw the chicken? (Like I always do) NO PROBLEM.

    The beauty of the Instant Pot is that you can add frozen blocks of chicken breasts and cook it!

    Just add an extra 5 minutes and let it natural release for frozen chicken. Then shred with two forks. Busy weeknight WIN.

    This hearty soup also freezes well! I love to make big batches of soup and freeze in individual airtight container. This way they can thaw in the fridge over night THEN in the morning can grab and take to work for lunch!

    Variation for Golden Chicken Soup

    The recipe does specify that EVERYTHING can be cooked in the Instant Pot. And it comes out dang delicious if you ask me ;). BUT noodles are noodles and have a tendency to absorb liquid. I designed this recipe with a small amount of noodles to begin with (only 4oz for the whole recipe!). It only absorbed a slight amount and we simply added some chicken stock or water to it for leftovers. No biggie.

    You COULD cook the noodles (or use rice!) separately and add it to the soup. Would guarantee no absorption and your noodles will always be noodle-y. 🍜 I LOVE good classic egg noodles for this soup but please use what you have on hand - no need to go to the grocery store for something different.

    Another time saving tip: USE leftover rotisserie chicken and then you only have to cook the soup for only 1 minute! The best part is the chicken is already cooked so the pressure cooking creates the depth of flavor in an instant!

    Description

    Ingredients

    Scale
    • 1 tbs olive oil
    • 1 small yellow onion, diced
    • 6 cloves of garlic, minced (CHOP THEN STOP)
    • 3 celery stalks, finely chopped
    • 2 carrots, peeled and chopped
    • 1lb boneless skinless chicken breast, cubed*
    • 1 tbs turmeric
    • 1 tsp salt
    • 1 tsp pepper
    • 1 tbs fresh rosemary, chopped (or 1 tsp dried)
    • Pinch of red pepper flakes
    • 5 cups of chicken broth or homemade stock
    • 4 oz dry whole grain pasta
    • 2 cups of kale, chopped

    Instructions

    1. Set your Instant Pot in SAUTE mode. When it reads HOT add the oil, garlic, and onion. Saute until softened (about 5 minutes).
    2. Add in chicken to slightly brown (another 3 minutes)
    3. Stir in celery, carrots, spices, broth, lemon juice, and pasta. Seal the lid. CANCEL the SAUTE mode. Set to MANUAL for 10 minutes. Use quick release (carefully) when it beeps to indicate that it is done.
    4. Stir in kale and serve!

    Notes

    *For FROZEN chicken - add to Instant Pot and add 5 more minutes to the cooking time (15 minutes total) and allow natural release.

      This soup IS golden!!! We needed a immunity booster to help us recover from influenza A. This was fast and used ingredients I had on hand

      Loved this recipe! Followed it almost exactly and it came out great. My boyfriend swore it was some of the best soup he's ever had. My only comment is that lemon juice is mentioned but it's not in the ingredient list. I just added to taste. 5 stars πŸ™‚
