Let's make this blah Monday into a delicious one with this peachy cobb salad.
Basically, your new favorite summer salad.
Monday's are...well, Monday's and I like to make a fun and easy dinner most Monday's because it's a necessity in my book.
And as you are well aware here on The Kitcheneer, I like my salads loaded and full of colors and textures. And absolutely NEVER boring.
This salad has some of my all time favorite flavors and they fit just perfectly in the summer season. And you can grab everything at your local farmer's market.
Our farmer's market in Fredericksburg is the best. There is one vendor I always go to because he has the BEST greens and onions. Seriously. Like his greens once lasted close to 2 WEEKS in my fridge and were still as fresh as the day I bought them!
Let's get into this salad. Which in my opinion I don't really think of this as a "salad". I think of it as a filling colorful dinner that I usually look forward to every night. I am even debating on making this for my birthday this week!
<-- see what I did there? Slipped in that it's my bday this week and I am kinda excited! The past few years I didn't get too crazy excited for my birthday and I chopped it up to becoming an "adult" but this year I am excited! PLUS we are having a staycation next week and am looking forward to that EVEN more! I'm talking beach day trips, Busch Gardens, pedicures, reading, and doing absolutely nothing with the hubs. CAN'T WAIT.
Plus, this salad makes FANTASTIC lunches for the week too! You could even top some pasta or quinoa with this salad to make this an even fuller meal! Especially if you're like me and LOVE some carbs!
(whole grains of course though 😉 )
The chicken is marinated in a balsamic based sauce (super easy) then grilled to perfection.
Next, add some sliced peaches on the grill for a couple minutes or until you get those nice grill marks.
Now, is the fun part of assembly.
Grab a BIG bowl and add:
Crispy chopped romaine lettuce
Bright plucked-from-my-garden-cherry-tomatoes
Crunchy corn (love texture!)
Grilled peach slices
Grilled chicken
Fresh herbs for extra flavor!
Now for dressings; I enjoy a simple olive oil and vinegar here or honey mustard would be fantastic.
This is the perfect easy healthy weeknight dinner OR a great addition to a 4th of July BBQ. Which is NEXT WEEK btw!!! Can you believe how quickly this year is going???

PrintGrilled Balsamic Chicken and Peach Cobb Salad
- Total Time: 25 minutes
Ingredients
- 4 Chicken Breasts
- ¼ cup Balsamic Vinegar
- Pinch of Salt and Pepper
- 1 Juice of Lemon
- 2 tbs Chopped Oregano
- 2 Heads Chopped Romaine Lettuce
- 2 cups Spinach
- 2 Peaches, sliced
- 1 pint Cherry Tomatoes
- ½ cup Corn
- ⅓ cup Red Onion, diced
- 2 tbs Pepitas
- 2 strips Bacon, cooked & diced
Instructions
- Preheat grill to medium heat
- Add vinegar, lemon juice, and spices to a container and stir
- Add chicken to marinate for 20 minutes on the counter
- Grill chicken for 5 minutes per side; add peaches for remaining 5 minutes; set aside to rest
- Assemble salads with greens, onions, tomatoes, corn, peaches, and sliced chicken.
