    Whole30 Instant Pot Chicken Pad Thai- YES, I went there. In about 25 minutes (total including prep time), you will have a delicious Whole30 compliant dinner! This Whole30 friendly healthy Chicken Pad Thai recipe with zoodles  is loaded with authentic flavors. Not only is this recipe Whole30 approved; it is also paleo, gluten-free, and low in carbs.

    The Instant Pot truly is worth it. Everything you hear about it from your friends....all true. I use it SO much.

    I am trying to incorporate more Instant Pot recipes here on the blog.

    One: because I LOVE IP recipes

    Two: You guys pretty much SCREAMED at me "GIMME ME INSTANT POT OR GIVE ME PAD THAI" when I asked what you all wanted to see here for your #januarywhole30.

    I aim to please 🙂

    And after a few years of this on the blog, this is STILL my favorite Instant Pot Chicken Pad Thai dish!

    How to make Whole30 Instant Pot Chicken Pad Thai

    After some research, I developed this version of a pad thai in my brain.

    Shallots and garlic are sauteed until fragrant in sesame oil

    The chicken is then added with some seasoning such as turmeric, coriander, coconut aminos, fish sauce, fresh ginger, and sunbutter.

    It's then sealed in the Instant Pot for 15 minutes on high pressure.

    I decided to go with zucchini noodles as my base because a traditional Pad Thai is served with soaked rice noodles and I feel like zucchini noodles or "zoodles" are close enough visually. 😉

    Guys, I made this the other day for the first time as a test recipe and Jake wanted more than what I made!

    I also made a batch for my coworkers and it was a hit!

    Therefore, you can trust that this is a lick the bowl, oh so good, tried and true dish that you can serve up any weeknight!

    Alternatively you can use sun butter in this recipe because there were so many of you that privately messaged me during my Whole30 recipes takeover about you or your family members being allergic to tree nuts. So, I am trying to create recipes that taste great with alternative to the traditional almond or peanut butter 🙂

    Description

    This Whole30 friendly healthy Chicken Pad Thai recipe with zoodles  is loaded with authentic flavors. Not only is this recipe Whole30 approved; it is also paleo, gluten-free, and low in carbs. Bonus? It's DONE in less than 25 minutes!

    Ingredients

    Scale
    • 2lbs Chicken breast, cut into cubes
    • 1 shallot,minced
    • 4 garlic cloves,minced
    • ½ cup jarred Thai sauce or 2 tbs red curry paste
    • ¼ tsp turmeric
    • ¼ tsp coriander
    • 1 tbs Seasame oil
    • 1 tbs fish sauce
    • 2 tbs coconut aminos
    • 2 tbs almond butter ( I LOVE Georgia Grinder's)
    • Zoodles (2 zucchini’s)

    Topping Ideas

    • Red bell pepper, cut into strips
    • Chives (garnish)
    • Cilantro (garnish)
    • Lime juice(garnish)
    • Shredded carrot

    Instructions

    1. Put Instant Pot in SAUTÉ mode
    2. Add oil,shallots,and garlic sauté for 3-4 minutes
    3. Add chicken,spices, fish sauce, paste,sunbutter,and coconut aminos.
    4. Stir in red bell pepper.
    5. Seal lid
    6. Switch to poultry mode for 15 minutes
    7. Remove lid and stir in zoodles
    8. Serve with lime juice,cilantro,and chives.
    9. Top with cashews and carrots

      Unfortunately I got the “burn” reading before it even came to pressure. All ingredients well mixed in, nothing stuck on the bottom before I put the lid on. Not enough liquid perhaps?
