Summer salads, they're actually sort of an obsession. I want to grill all the fruits!
Honestly, can't say enough great things about this grilled peach salad with strawberries; it simply makes the all-purpose summer perfect dish: it's a great recipe for an easy light dinner, side dish, and great to bring to your next backyard BBQ.

Grilled Peach Salad with Strawberries Recipe HIGHLIGHTS:
Earlier last week I shared my re imagined summer cheese board with grilled fruit. Now, I decided to add my two favorite summertime fruits to an enormous salad and actually look forward to Thursday's lunch!
Every year I seem to stumble upon a seasonal summer salad recipe that I eat every summer with obsession. Last year? Whole30 Nashville Chicken Salad The year before that? Grilled Balsamic Chicken and Peach Cobb Salad . This summer, it's gonna be this Grilled Peach salad with juicy peaches and summer ripe strawberries.

SERIOUSLY SIMPLE: Leaning into in season produce not only is the tastiest time to try these fresh produce, it support's your local farmer's market, and this Grilled Peach Salad is meant to impress but it is simply thrown together effortlessly.
It's SIMPLY VERSATILE: Meaning you can make it how you like it. Most summer weekends/nights my Traeger is on doing it's thing and throwing on a few sliced peaches (cut side down) and some chicken is super easy to do. But you do you! I love bringing this to BBQ's without the chicken and will add more berries, maybe some feta cheese, and crunchy pine nuts for extra texture!

Why this summer peach salad recipe is GREAT for ENERGY
But first let's talk about staying active this summer. I have had so much energy lately from feeding my body with good foods (like this bowl) and pushing myself harder than ever at the gym. Ever since I sprained my wrist really bad at the end of last year, it's been very challenging to go all in at the gym. I mean, I do modified workouts...but it's not the same and has been extremely frustrating. But FINALLY my wrist has been feeling a lot better and I am SO motivated to do better than ever.
I have been going 4x a week and some days twice a day to work on technique or get some extra cardio in. Point is, I am staying active all summer long and I want to know what ways you enjoy fitness? What is your favorite fitness?
Feeding yourself the right way impacts your performance SO much! I have been eating more protein (lean proteins to plant based like chickpeas & lentils) and I have seen so much improvement. Guess I wasn't eating enough!
But this salad has everything you need to fuel your day. I basically have been eating this for lunch and dinner for the past 2 days. SO GOOD.
The chicken is marinated in a simple concoction of olive oil, lemon juice, cumin, salt, pepper, and oregano. I use this marinade for most of my chicken recipes. It's easy and the chicken gets juicy and flavorful just sitting on the counter while I make the rest of this bowl.
After, just grill the chicken as you normally would and place peaches on the hot grill to finish! It's as easy as putting everything in a bowl and eating!

The combo of the caramelized grilled fruit with the savory chicken, goat cheese, quinoa, and avocado is honestly so good. The quinoa is what makes this salad a meal. It is high in fiber, full of whole grain, and adds even more protein to your diet!
How to grill fresh peaches for this summer salad
The only prep work here is throwing the chicken on the grill then about 5 minutes before the chicken is done cooking I will throw whatever fruit I have on hand on the grill too! You can grill pineapple, stone fruits, watermelon, and even strawberries!
Picking the best peach to grill: You want to choose a ripe peach that is still firm. What's great about these is that the soften up on the grill! If you can't find the perfect peach, try nectarines here instead!
Grilling Temp and Timing: The peaches grill best being placed directly on the grill at around 450F for about 2-3 minutes per side. If you do not have an outdoor grill, no problem! Simply use a grill pan instead!
And guys, the combo of grilled peaches with strawberries ALONE gives me tons of recipe ideas! Especially breakfast ones! SO SO GOOD!

And the fruit was so juicy that I didn't even need dressing! But if you wish to add some dressing balsamic vinaigrette or oil and vinegar would do very well here.
How to Store & Serve this Summer Grilled Peach Salad
As I mentioned above, I LOVE making the Strawberry Balsamic Vinaigrette ahead of time (keeps for up to a week in the fridge) and I buy enough greens and berries to make this as my "meal prepped" salad all week long!
To store: Simply toss everything together (minus the salad dressing) and store in an airtight container for up to 1 week. I LOVE me some big ass salads y'all. Plus it's such a simple grab n go lunch option and not the average sad desk salad.

I'm going to make this for dinner tonight! I'm going to make it on the stove instead of the slow cooker, though. Thanks for the lovely dinner inspiration! 🙂

I tasked the hubby with throwing this in the crockpot the other day for dinner. It turned out so good! I wouldn't change a thing. I also shared it on my blog today -- linking back to you of course 🙂 Thanks for sharing!!
