    Apple Harvest Roasted Chicken

    Whole chicken, spiced apple cider, cinnamon, and all the flavors that make fall the BEST season of the year!

    Can y'all BELIEVE it's NOVEMBER?!

    And yes, I realize it's been MONTHS of inconsistency here on the blog. I lost my rhytm you know? And there's been quite a bit of personal/family things going on. So I decided for my self-care to take a little break.

    NOT feeling the need to post every little thing of my life has been freeing. I think I will try to do a better job of making this blog my creative workspace where I continue to share my recipes which are now gravitating towards my FOOD FREEDOM.

    That's right. I no longer DIET. It's taken me 20 years to realize that TRUSTING my own body is my method going forward. Eating intuitively, listening to my natural hunger cues, and I will still do an occasional Whole30 when my body needs a reset.

    Like right now. I am on my NINTH Whole30. And this time my mindset is different. I am SO proud of myself for not counting calories, restricting, my body WANTS the Whole30 foods. It's crazy. I have been experimenting all summer. At first it's hard to trust yourself. But once you get there (still getting there) it's AMAZING.

    Anywho, all that to say is. My recipes will be reflecting what I am naturally gravitating towards. So whether it's Whole30, Whole30ish, to mac n cheese. Food is food.

     

    Ok, back to this roasted chicken.

    Y'all it's such an EASY yet impressive meal to put together. Plus very budget friendly! I mean a typical whole bird costs roughly $6!

    The chicken is stuffed with apples, onion, then some ghee (under the skin), salt, pepper, and cinnamon!

    Roasted in the oven with apple cider at the base. This creates a apple cider steam room where the chicken is literally absorbing that apple flavor.

    Apple Harvest Roasted Chicken

    Description

    Apple Harvest Roasted Chicken- whole roasted chicken that is roasted with apples and with apple cider at the base that evaporates flavoring the whole bird while it cooks! Also Whole30 compliant!


    Ingredients

    Scale

    1 Whole Chicken

    1 tsp salt

    1 tsp pepper

    1 tsp cinnamon

    2 tbs ghee

    1 Honeycrisp (or other baking apple) , sliced

    1 white onion, quarted

    2 cups of apple cider (check ingredients if doing a Whole30)


    Instructions

    Preheat oven to 375F

    Pat chicken dry with paper towels

    Stuff chicken cavity with onion and apple slices

    Spread the ghee over the chicken and season with salt, pepper, and cinnamon

    Place chicken on roasting pan

    Pour apple cider in bottom of roasting pan

    Cover with aluminum foil (for maximum flavor!)

    Roast in oven for 45 min-1 hr (until internal temperature reaches 165F)

    Enjoy!
