    The COZIEST Instant Pot Bison Butternut Squash Stew

      Today I want to talk to you all about hearty,cozy, and comfort-in-a-bowl kind of food. Specifically this SUPER cozy Bison Butternut Stew made in the Instant Pot or low and slow in your slow cooker. You're the boss applesauce!

      I know I have made it very clear here on the blog...but I DO NOT like doing dishes so that's why I love using and developing recipes that requires no more than 1-2 dishes to clean after!

      And after the last couple of stressful weeks I think we all have been turning to comfort foods! And this is a great combination of healthy meets hearty.

      I also teamed up with my friends at The Honest Bison. I used their AMAZING Bison Stew Meat in this recipe and you should too!

      I have made plenty of stews before but none with the essence of fall in a bowl like this one! And DONE in 45 minutes!

      Like I mentioned before, I am a sucker for Fall. Period. And when I walk into my local Trader Joe's and see all the cute squash, apples, pumpkins,and decor... I just get so inspired to take them all home and create!

      But what about the deets on this recipe???

      It's all about the beef (bison). The best thing about bison stew vs beef stew is the flavor. I actually prefer bison over beef whenever I can find it. It's leaner but has the tendency to absorb flavors better with all the grain lines in the meat. This is why I typically lather on the dry rub, spices, or in this case the stew. The bison absorbs all that fall flavored goodness from the onions, apples, and butternut squash and in turn the bison gives the broth and stew a richness that is just SO GOOD.

      The bison is seasoned, seared first. Then the rest is dumping all the other ingredients into the pot and sealing the lid!

      To serve this stew, I am a big fan of serving this over potato or cauliflower mash with a garnish of some fresh herbs and it's supper time!

      Description

      The Coziest Bison Butternut Squash Stew - all made in the Instant Pot in 45 minutes!


      Ingredients

      Scale
      • 2 packages of The Honest Bison Bison Stew Meat (or 2lbs of stew meat)
      • ¼ cup of arrowroot powder
      • 4 tbs of grassfed butter or ghee
      • 1 sweet or white onion (diced) - I only had red left for the ingredient shot 🙂
      • 4 cloves of garlic
      • 1 ½ cups of cubed butternut squash
      • 1 honeycrisp or granny smith apple, cored and diced
      • 2 stalks of celery, sliced thin
      • 3 cups of beef/bone broth
      • 2 tsp paprika
      • 1 tsp salt
      • 1 tsp pepper
      • 2 tsp onion powder
      • ¼ tsp cinnamon

      Instructions

      1. Prepare and cut all the vegetables
      2. Set the Instant Pot to SAUTE mode. Dredge the bison in the arrow root powder until evenly covered. Once it reads HOT, add the butter and the stew meat.
      3. Sear stew meat on all sides (about 5 minutes). Add all remaining ingredients. Seal the lid.
      4. Turn OFF Instant Pot and switch to STEW mode for 40 minutes. Once it beeps to indicate it is done, allow to naturally release for 5 minutes.
      5. Once lid has been safely removed, switch back to Saute mode to allow the stew to thicken a little bit.
      6. Serve! (I love serving on it's own in a bowl, over cauli rice or regular rice, and mashed potatoes!)
