    Easy Vegetarian Instant Pot Fajitas

    Keeping it healthy and veggie packed with these super tasty Easy Vegetarian Instant Pot Fajitas featuring peppers, onions, lots of spices, lentils, and walnuts!

    Also keeping things EASY by having everything sauteed and cooked via dumping everything into the Instant Pot then serving this up taco or bowl style and all comes together in less than 20 minutes! This is the perfect plant-packed weeknight dinner that is equally healthy and ready for Taco Tuesday!

    Pro Tip: Make this on a Sunday night and have tacos, taco salads, and "chipotle" style bowls all week long!

    As you may or may not be aware, we are on a vegetarian kick recently and were not stopping anytime soon.

    You see, nutritionally speaking new studies have found that contrary to popular fitstagram belief (one I have been guilty of following for many years) that we eat WAY too much protein.

    Did you know that the current recommendation from The World Health Organization are a minimum of 46 grams of protein a day for women and 56 grams a day for men? Or 0.8 hrams per kilogram of lean body mass?

    Most "fitness" gurus on the web have us looking at consuming a gram per pound of body weight! Which is INSANE.

    Again, guilty as I have followed those trends which only led to decreased energy, increase in cortisone, insomnia-like behavior, high anxiety, and most importantly I fell back into my disordered eating patterns with food.

    Anyway, I am ALL about satisfying my taco cravings so enter this easy Instant Pot Veggie Fajita!

    First step is to saute the onions and peppers in the Instant Pot for a few minutes. It's not a fajita in my opinion if there isn't a little caramelization of the peppers and onions. Once they are sauteed just dump everything else into the pot, seal her up, then wait for 10 minutes until DONE.

    In the mean time I recommend:

    • Making or getting out your favorite guacamole. I recommend this guacamole (personal favorite).
    • Chopping up any other toppings (cilantro, extra lime wedges, etc)
    • Heating up your tortillas

    Description

    These Easy Vegetarian Instant Pot Fajitas are SO GOOD. Roasted peppers and onions, ground beef-like lentils and walnuts,some mashed avocado, and all the toppings!


    Ingredients

    Scale
    • 2 tbs avocado oil
    • 1 red onion, sliced thin
    • 1 red bell pepper, sliced thin
    • 1 green bell pepper, sliced thin
    • 1 yellow bell pepper, sliced thin
    • 1 cup of dried lentils
    • ½ cup chopped walnuts
    • 2 cups of water
    • 1 14oz can of fire roasted tomatoes
    • Juice and zest of 1 lime
    • 10 corn tortillas

    Taco Seasoning

    • 1 tbs chili powder
    • ½ tsp onion pwder
    • 1 tsp garlic powder
    • 2 tsp cumin
    • ½ tsp oregano
    • Pinch of cayenne pepper
    • 1 tsp salt and 1 teaspoon pepper

    Options for fajita bowls

    • Shredded iceberg lettuce
    • rice or cauli rice
    • guacamole
    • plantain chips
    • cilantro
    • limes

    Instructions

    1. Prep the peppers and onions. Stir all seasonings in a small bowl, set aside
    2. Set Instant Pot in SAUTE mode. Once it reads HOT, add oil, peppers, and onions
    3. Saute the peppers and onions until slightly charred (about 5-7 minutes) stirring frequently to prevent burning.
    4. CANCEL the SAUTE mode. Add lentils, seasoning, water,tomatoes, zest and lime juice.
    5. SEAL the lid and set timer for 10 minutes.
    6. Once Instant Pot beeps to indicate it is done, safely quick release the steam.
    7. Serve! Either serve up in tortillas with your favorite toppings or in a bowl "chipotle" style with greens, rice, guacamole, corn, etc.
